We had a wonderful preview of Spring this weekend with temperatures creeping into the upper 60s. It was the perfect weekend to celebrate the birth of one of our friends at the lake.
Since i'm trying to eat a bit more Paleo/Whole 30 lately (using a bit like an elimination diet to experiment with foods), I had to put a little bit more thought into my meals for the weekend. I found this recipe for chicken tenders and knew I had to give it a try. These definitely have a kick to them, but they were delicious and liked by many.
Ingredients:
1.5lb chicken cutlets or tender strips
1 cup almond meal
1 Tbsp paprika
1 tsp garlic powder
1/2 tsp cumin
1 tsp cayenne pepper
1 tsp salt
2 eggs
Directions:
1. Preheat oven to 375 and lightly grease a baking sheet.
2. Combine the almond meal, paprika, garlic powder, cumin, cayenne and salt in a dish large enough to coat the chicken.
3. Place the eggs in separate dish and lightly beat.
4. Coat each chicken strip first in the beaten eggs, followed by the almond meal mixture.
5. Place on the baking sheet and bake for 15 minutes. Flip and continue baking for about 10 minutes.
6. Enjoy with your desired sauce!
