I apologize for the long delay in posting. This past weekend the boy and I went camping with a couple friends in the mountains of North Carolina. We found a great campground in Todd, NC just north of Boone. This is an annual trip that the boyfriend and his old coworkers do, so I had been hearing about it since we started dating! Unfortunately, Mother Nature was not on our side as rain was in the forecast for the entire weekend. And rain it did...all weekend long. However, we still had a great time, filled with good food and plenty of stories to tell.
Since i'm a dietitian let's cut straight to the food part of the weekend. We knew that we would need to pack for ~5 meals and then snacks in between. My boyfriend and I planned out our meals the week before for ease of grocery shopping and to consolidate so we didn't have to bring as much. We scoured the internet for camping meals and discovered some great ideas.
The best meal in my opinion was our hobo packs. Hobo packs are essentially some form of meat and a bunch of vegetables (and anything else you have lying around) mixed together. This mixture is wrapped in foil and when ready to eat thrown on the fire. Our hobo packs included ground turkey (pre-cooked), mushrooms, onions, bell peppers and a few cucumbers from our garden (they are coming out of our ears!). A couple spices were thrown in making it a delicious, easy, inexpensive camping meal.

From a nutrition standpoint this meal was healthy as well as yummy. This was a good addition since I certainly had my fair share of s'mores this weekend! If you've never tried using a Reese's cup in the place of regular chocolate you haven't lived!
