Yesterday was a beautiful day and after a long bike ride I was looking for a way to cap off the weekend! I was eyeing different recipes on the internet and knew I wanted something easy and quick. I then came across a recipe for Lo Mein and automatically thought Pad Thai, since it's one of my favorite dishes. I struggle with Pad Thai though because it is delicious, but can be loaded with calories. I also figured that it would take forever to make! I searched a little bit more and I found a recipe for healthy Pad Thai that only takes 25 minutes! What Pad Thai lover wouldn't give it a try!
We made a quick trip to the grocery store to pick up some items that we didn't have in the cabinet (aka fish sauce) and got started. We followed the recipe here and it was incredibly simple. We used chicken instead of shrimp and nixed the scallions since i'm not a big fan, but kept everything else the same. It says that the recipe takes 25 minutes, but it was even faster than that!

I will say that it wasn't the same as getting Pad Thai from a Thai restaurant (less sauce on the homemade version), but I also got the taste that I love without the added calories and overly-full stomach. Not a bad dish to keep in rotation.
