Remember when mom used to make those peanut butter and jelly sandwiches...with jelly oozing out...and peanut butter sticking to the roof of your mouth? Makes me hungry just thinking about it! Who would've known that all those early life PB&Js would've had such an impact 20 years later.
Sometimes I don't have any leftovers from dinner for lunch the next day...or i'm just being lazy, which often happens too. However, many times I need a quick lunch at the office that isn't time consuming, but is also balanced and nutritious. This is where the tried and true peanut butter jelly sandwich comes into play.
Yesterday was one of those days. We had gone out to eat the night before and I didn't have any leftovers. Thankfully, I have a jar of peanut butter and a container of grape jelly in the office fridge. I picked up a loaf of bread and I was good to go. Look at that ooey-gooey goodness!

Not only is this lunch easy, but it's healthy (or it can be made healthy). Peanut butter contains protein as well as healthy fats while the bread and jelly act as a carbohydrate for quick energy. Now when choosing the ingredients, you do want to look for the best options with the least number of ingredients. I chose Smuckers Natural Peanut Butter because it only contains peanuts and a dash of salt. The Grape Jelly I got from Publix also had minimal ingredients and used natural sugar rather than the alternatives that we typically get way to much of. The bread was whole wheat, which I made sure was the first ingredient to ensure the best nutrition.
After being fueled by this delicious and simple lunch, I was later able to complete an interval workout with running and walking. I did ~25-30 minutes of this workout:
Jog 10 minutes regular pace
Sprint 1 minute
Recover 2 minutes
Repeat 6 times
Cool down
