This weekend was a catch up weekend with lots of errands and housework. Yesterday, was a bit odd because the weather kept changing from sun to rain, so with a little extra time on my hands, I decided to make one of my favorite cuisines for dinner...Indian food. After a bit of searching on the internet, I settled on these recipes: Tandoori Chicken and Aloo Gobi.
In typical Katie fashion, I of course tweaked them to my liking. In the Tandoori chicken, I substituted coconut milk for the yogurt and baked the chicken instead of grilling (the weather caused this change). I left the peas out in the Aloo Gobi because the boy isn't a huge fan of peas.
The result was a delicious, mouth-watering array of spices and seasonings. Both dishes were so flavorful and definitely ones i'll try again.
