It was a busy, but relaxing weekend here in the south. I was dogsitting a cute little beagle for my friends this weekend, which allowed me to get in my fair share of HGTV. It's amazing how I can get totally sucked in to renovation shows. I love watching the transformation and thinking about how I would do things the same or differently. Luckily, the boy likes to watch the shows with me so there is company in my laziness.
On Friday night I got together with one of my good friends for dinner and catch up. We dined on salads from our favorite restaurant, TM-Tortilla Maria (http://tortillamaria.publishpath.com/). They pride themselves on fresh, organic ingredients which creates delicious meals. The salad that we love combines various greens and cabbage with cranberries, slivered almonds, tomatoes and incredibly spiced chicken all topped with a ginger dressing. AMAZING!
Saturday morning started with a bike ride. I had scoured the internet for different paths in our area when I realized that our beloved Swamp Rabbit Trail (SRT) actually had an entire part south of where I thought it ended. The two pieces have not yet been connected, but still led to ~8-10 miles round trip by itself. The path surrounds Lake Conestee, which was nice for new scenery.
However, the path was HARD. The part of the SRT that we usually ride on is relatively flat. This part was very hilly with little to no reprieve. It's amazing how your body uses such different systems to deal with high intensity training versus endurance training. Since this portion of the trail is not completed yet, that also led to a slight mountain biking feel as not everything was paved. I was wiped after our ride, but nothing that a girls night later couldn't fix!
All in all, a wonderful weekend with TM, HGTV and SRT!
