With Summertime coming to a close and temperatures cooling off, I had to give an old favorite one more life. I have seen Watermelon Feta Salad all over the internet this year, which means that I am not the only lover of the salty/sweet combination. The best part is that you can change ingredients to make it any way you like! I haven't listed amounts of ingredients because that's where the creativity comes in...and I certainly only measured things by what my tastebuds were telling me!
Ingredients:
Watermelon-Seedless
Tomatoes
Red Onion
Feta Cheese
Mint
Balsamic Vinegar
Olive Oil
Salt
Pepper

Directions:
1. Chop watermelon in bite size cubes and set aside.
2. Chop tomatoes and mint and dice red onion.

3. Combine watermelon, tomatoes and onion. Sprinkle feta and mix.
4. Drizzle balsamic vinegar and olive oil over top of mixture.
5. Garnish with mint and sprinkle with salt and pepper to taste.
