Summertime = watermelon season. As kids one of my favorite memories is having watermelon seed-spitting contests off the back deck. I think it was rigged though because my brother almost always won.
On our trip to Costco this weekend, watermelons were on sale and we couldn't resist. We sliced one up last night and have been eating it non-stop since.

Watermelon is a juicy, light treat, but it also has great health benefits to make it worth eating. Watermelon is made of ~92% water, making it a low calorie snack at only ~43 calories per cup (diced). Along with an outstanding water content, watermelon packs a fantastic Vitamin C content (~12mg/cup diced). Watermelon also has a ton of antioxidants and anti-inflammatory components, including lycopene. Lycopene can help aid in heart health as well as, prevention against multiple diseases. So not only is that watermelon delicious and refreshing, but you're treating your body well!
