Life definitely threw a curve-ball this past weekend, but we are catching up and holding it all together. Now back to regular blogging hopefully!
You all have heard me talk about "convenience" foods before as being highly processed foods that aren't very nutrient dense. However, sometimes things happen in life and you aren't able to prepare food for yourself on a regular basis. And sometimes you're in a pinch, but still want to be healthy.
The boy and I were on the search for this type of healthy, convenience food this weekend. We had a pretty good deal of success at Costco and wanted to share it with you all!
First, we found a few different Indian meals (we love Indian food!) that can be thrown in the microwave for 1 minute and boom, meal prepared. The best part about these fast meals is they contain no preservatives or things you can't pronounce! Serve this with a small salad or add grilled chicken and you're good to go!

Next is a Cuban mix of grains and legumes. This dish again can be cooked quickly in the microwave and doesn't contain any preservatives. A little Cuban flair never hurts!
Finally, we found a pasta that is made completely from red lentil flour. The best part of this pasta is that it only has one ingredient (red lentil flour). Even better is that it contains 14g of protein per serving, which most pasta doesn't compare to that. I can't wait to try this with a little pesto and veggies.
I was pretty pleased with the items we were able to find that are technically processed/convenience foods, but don't contain preservatives and can be included in a healthy lifestyle.
