This weekend the boyfriend and I went to the East Coast where my family has a beach condo for a little R&R. One of our favorite things to do at the beach, after consuming massive amounts of frozen custard, is to have crabs for dinner at least one night. The boy and I ventured out to accomplish this task on our own.
After spending many years vacationing here, I knew the perfect place for crabs. However, deciding on a side dish was the hard part. I remembered that last year my sister made a corn salad type of dish that was a great addition to the meal. I decided to make some modifications to it and give it a whirl. We headed to the local produce stand and the grocery store to pick up the ingredients.
The first step was to get the corn cooking. 4 ears of corn were shucked and placed in boiling water. The tomato and cucumber were chopped into cubes. The jalapeno was diced very finely to allow for the best taste and distribution.
However, recipes can always be changed and learned from. If I was to make this salad again (and let's be honest...WHEN I make this salad again), I won't mix the feta cheese in and will simply crumble it on top. I think this will give even more distinct flavors from all the fruits and vegetables.
