I have seen so many different recipes for overnight oats on the various blogs that I read that I finally decided it was time to give it a try. I liked the idea that a couple quick minutes at night could lead to virtually no effort for breakfast in the morning.
I had a couple jars lying around and most of the ingredients already, which made the process even easier. I did decide to use steel cut oats, which made a chunkier/chewier texture. Steel cut oats have gotten a lot of press lately because they are less processed than normal rolled oats and can have less added sugar depending on the brand you buy. Either option of oats is fine for this meal and can be a great source of fiber.
To make this quick meal:
Ingredients:
1/2 cup uncooked steel cut oats
1 cup Greek yogurt
1/2 cup water or milk
1/8 cup sliced nuts
1/8 cup dried cranberries
Combine the oats, water/milk and Greek yogurt in a jar and mix. Refrigerate overnight. In the morning remove from the fridge and mix in nuts and cranberries. You can also add a bit of cinnamon or other flavoring as you desire. Enjoy!
