With the start of the new year i've put a great deal of effort into cooking more and trying new and different recipes. Most of them are simple, but it's always fun to have a change up in the normal menu. But I do have a confession- I create some of the ugliest dishes! I look at other bloggers and their gorgeous pictures of food and mine definitely aren't on that level. And that's ok! Sometimes the more important thing is quality over beauty!

The boy and I cooked up some spaghetti squash, grilled some chicken and roasted some cauliflower. We topped the spaghetti squash with pesto that my mom made this summer (http://kphornerrd.weebly.com/home/its-always-better-when-mom-makes-it).
Let's be honest. This meal looks disgusting! However, it's pretty nutritious. We get good protein from the chicken, good nutrients and some carbohydrates from the vegetables and healthy fats from pesto. Excellent quality on the inside even though it struggles on the outside.
Hopefully, this inspires you to cook and not be disheartened by your ugly dishes. Even the ugly ones have something to bring to the table!
