A beautiful weekend complete with the first bike ride of the season, a hockey game and opening weekend for baseball! Unfortunately, we're back to April showers for this dreary Monday.
Hopefully, I can brighten up your Monday morning with this delicious recipe. Now i'm a huge fan of Thai food, particularly Pad Thai. So, when my friend mentioned making Thai peanut chicken, I was extremely intrigued. She sent me a couple of different recipes she had tried and I decided to give this one a whirl. I followed it loosely to say the least!
Ingredients
1/2 cup soy sauce
1/2 cup chicken broth
4-5 tablespoons chunky peanut butter
2 tablespoon fresh lime juice
2 cloves garlic, minced
1 tsp garlic powder
2 tsp ginger powder
2 tsp crushed red pepper flakes, or as desired
4 chicken breasts, diced into bite size pieces
1 bell pepper, diced
1 onion, diced
Desired amount of rice noodles (we used about 3/4 cup each)
Directions
1. Place diced chicken in a pan and cook thoroughly. Place diced bell pepper and onion in pan, once chicken is cooked, and briefly heat (bell pepper and onion can be cooked longer as desired).

2. In a large pan, add soy sauce, broth, peanut butter, lime juice, garlic, garlic powder, ginger and red pepper flakes. Cook and whisk until fully combined into a creamy sauce (yes, it will probably look disgusting as seen below).
3. Cook rice noodles as instructed on package.
4. Pour heated sauce on to chicken, bell pepper and onion mixture. Mix well.

Simple, but incredibly delicious. The boy and I both gave this one a thumbs-up with a plan to make it again soon!
