Yesterday, one of my patients mentioned making salmon burgers using oatmeal instead of bread crumbs and it peaked my interest. While I wasn't interested in making salmon burgers last night, I figured that if oatmeal could be substituted in that recipe, it could be in plenty of others. I gave it a try last night by making meatballs using oatmeal instead of bread crumbs.
I ground the oats nice and fine in a food processor just to avoid the big clumps. The best type of oats would be the quick oats, but others work fine as well (I would avoid steel cut as they are too tough).
I combined ground turkey, spinach (I just bought the frozen kind and thawed it) and chopped onion in a bowl.

I then added 1 egg, 1 Tbsp garlic powder, 1 Tbsp oregano and 1/2 cup ground oats to the mix. I combined it well with my hands and rolled into balls.
I cooked these at 400 degrees for about 20 minutes.
These were a delicious and the boy couldn't even tell that I had used oatmeal instead of breadcrumbs!
I can't wait to try some other recipes using oats instead of breadcrumbs.
