This weekend the boy and I got the chance to go up to Charlotte to celebrate my friend's birthday. She and her husband just moved to Charlotte and I could not be more excited to have them much much closer!
To celebrate, we all met up at the U.S. National Whitewater Center. This facility opened in 2006 and is the olympic training center for whitewater slalom racing. Not only does it have whitewater rafting, but it has rock-climbing, trails for hiking/running, ropes courses and more.

Unfortunately, they were full for rafting when we arrived, but we entertained ourselves with the ropes courses and zip lines. The nice thing is you only have to pay for a pass if you plan on doing the activities. Plenty of people were there enjoying the beautiful weather and watching others. They even have concerts occasionally, which adds to the relaxing, but adventurous vibe. I didn't take any pictures because my phone was safe in a locker the whole time, so the one above from tripadvisor will have to do!
We finished the day with a wonderful meal at Mimosa Grill where I had their famous Ppecan-crusted trout. I can definitely see why it's one of their most popular meals!

Sunday was a busy day with lots of home projects, but everything slowed down in the evening in time to enjoy crock-pot chicken cacciatore with soba noodles. Not my favorite combination, but not bad.
