The beginning of the week starts off busy with softball on Monday nights and volleyball on Tuesdays. This means that Monday and Tuesday consist of quick, easy dinners that don't typically have leftovers. Since I usually take leftovers for lunch the following day, I have been searching for quick, easy meals to use for lunch in their place. After telling all my patients how great of a substitution avocado can be for various ingredients, I finally gave it a try. This avocado chicken salad really hit the spot!
Ingredients:
*This recipe makes ~3 cups of salad
2 Chicken breasts
2 stalks celery, chopped
1/2 cup red seedless grapes, chopped
1 avocado
salt and pepper to taste
Preparation:
1. Bake chicken breasts in oven at 425 degrees for ~30 minutes or until cooked thoroughly (you can alter this and broil or use a crock pot as well). Cool.
2. Shred chicken with hands or fork. Place in refrigerator for 2 hours or until chilled.

3. Chop celery and grapes and add to shredded chicken.
4. Cream/mash avocado with fork.
5. Add chicken, celery and grapes mixture to mashed avocado and mix. Add salt and pepper to taste.
All in all this was a delicious and fast meal to make. You can eat it as a sandwich or on a salad. Now i'm not a big mayonnaise person anyway, but I didn't miss it at all. The only tweak I would make is to add more ingredients next time. I think that adding onions, bell peppers and/or nuts could be a great addition. But the perfect thing about this type of meal is that you can make it your own with whatever additions you want! Happy Hump Day!
