As you guys saw in the Monday post, we went on a Costco shopping spree and found some neat new foods. We had the chance to try Uddo’s Kitchen Red Lentil Penne last night.
This pasta has one ingredient, which is my kind of food! It also boasts 14 grams of protein per serving, which is WAY more than traditional pasta (~3-7grams).
Now, you have to remember that this pasta is made out of lentils, so it does have a bit of a different taste. However, I ended up preferring it’s taste over regular pasta. And when we added a bit of pesto (mom’s homemade from last summer) it couldn’t be beat! We paired the pesto-lentil pasta with grilled chicken and sautéed greens and onions.
A delicious summertime meal!
